Recipe : Chocolate Chip Cookies

OK, I might be a teensy, weensy bit biased, but I think that this is, hands down, the best chocolate chip recipe EVER.

I eat the dough. I eat the fresh, out-of-the-oven cookies, and I gobble up any remaining leftovers the next day (ya, leftovers, right). My kids continually ask for these cookies, and because I have absolutely no will power, I only make them when I know I can get them out of the house .. to a party, a fund raiser, a neighbour, anything as long as I don't have to smell their aroma, or see their tempting little tidbits of chocolate goodness.

So, here it is .. beware, they are mouthwateringly addicitve. Is 'mouthwateringly' a word?

Don't forget, the key to good chocolate chip cookes, is to not overbake them. Take them out when the edges are starting to turn golden.

Chocolate Chippers

Margerine or Butter, softened    1 cup / 250 ml
Brown sugar, packed                  1.5 cups / 375 ml
Large eggs                                    2
Vanilla                                             1 tsp / 5ml

All purpose flour                            2 cups / 500 ml
Cornstarch                                     1/4 cup / 60 ml
Baking soda                                  1 tsp / 5 ml
Salt                                                  3/4 tsp / 4 ml

Semi sweet chocolate chips      2 cups / 500 ml

Cream margarine and brown sugar in large bowl. Add eggs 1 at a time, beating well after each addition. Add vanilla. Beat until smooth.

Combine next 4 ingredients in a small bowl. Add to margarine mixture in 2 additions, mixing well after each addition until no dry flour remains.

Add chocolate chips. Mix well. Drop, using 1.5 tbsp (25 ml) for each, about 2 inches (5 cm) apart onto greased cokie sheets. Bake in 350F (175C) oven for 10-15 minutes (about 12 minutes works in my oven) or until the edges are just turning golden. Do not over bake or cookies will turn from ooey-gooey goodness to crispy yumminess. Still delightful, just not ooey gooey. Let stand on cookie sheets for 5 minutes before removing to wire racks to cool. Makes 3-4 dozen.

So, so, good with cold milk, hot tea, red wine, cosmopolitan, anything really.
Yum!

      This batch makes about 4 dozen cookies. To save your waistline, make about 2 dozen, and then freeze the rest, individually, and thaw/bake when need in the future ... like, say, Christmas
